Two Summer Cookies

When its baking out there, it is hard to bring myself to bake in here. Cranking up an oven to 375 degrees in a room that’s already 85 degrees and an ambient outside temperature of 90 degrees, just does not sound appealing no matter what promise the other side of the oven door holds.

So here are two of my absolute favorite summer “cookies.” We’ve all eaten refrigerator cakes. These are freezer cookies. Absolutely no oven required. And I swear, I’ve made these two and popped them in the freezer in half an hour. 2 varieties, 40 cookies in 30 minutes? Yep, I’m there.

Homemade High Fiber Light Pumpernickel Bread (No Need to Knead!)

After a few months of making do with the sad excuses for “bread” that gluten-free commercial manufacturers produce, I bought my last frozen Food for Life Brown Rice Loaf, had a Scarlett moment, and swore, I will never be hungry [for bread] again!

Easy as Pie Blueberry Crumble with Cashew Cream (if you’re so inclined)

I don’t know about you but I think “easy as pie” makes as much sense as “working like a dog.” I absolutely love pies. But sometimes you need something more time-sensitive. (That sounds a little more restrained than “quick fix” :) . There is no season more perfect for the crumble than summer, of course. We went blueberry picking the other day and while we did not have the heat-resistance to pick bushels upon bushels, we did pick enough for eating, freezing and to make a yummy Blueberry Crumble.

Herbal Iced Teas to Cool and Cure

Ahhhh. Summer. Sun and 95 degrees. One of the things I look forward to during this season is crafting wonderful Herbal Iced Teas. You don’t need to spend $$ and waste all that packaging by buying pre-bottled iced teas. A lot of iced teas also come unnecessarily loaded with sugar that you definitely don’t need. Its very easy to make your own and its fun to experiment with different flavors!
